Johnnycake
Ingredients
- 4 ears of corn cut off kernals
- 1/2 c milk (non-dairy)
- 2 T butter (non-dairy)
- 3/4 c flour
- 1/2 c ground cornmeal
- 1/2 t baking soda
- 1 t baking powder
- salt and pepper (be liberal)
Instructions
- using a blender, puree 1/3 of the kernels, butter, and milk
- mix flour, cornmeal, baking soda, and baking powder
- add puree mixture to the flour mixture and add the remaining kernels
- add salt and pepper - add scallions if you please
- stir until just combined
- cook on griddle or pan over medium high heat - make sure cooked in the middle
