Vegetable Burger
Ingredients
- 1 lb. green lentils
- 2 lb. pearl barley
- 2 green peppers
- 2 red peppers
- 1 red onion
- 1 lb. button mushrooms
- 4 T vegetable base
- 1 qt. packed arugula
Instructions
- Cook lentils with 1 T vegetable base to al dente. Strain & cool.
- Cook barley with 1 T vegetable base similar to risotto keeping all the starch, strain IF necessary.
- Puree peppers, onions, garlic, and mushrooms to a fine paste.
- Sautee pureed vegetables to thick paste.
- Puree 2 cups of the cooked barley (do not add liquid).
- Mix all ingredients.
- Season salt & pepper TT.
