Whole Wheat Pasta Dough

Ingredients
  

  • 1 1/4 c. all purpose flour
  • 1/2 c. whole wheat flour
  • 1 whole egg
  • 3 yolks
  • 1 t olive oil
  • 1 T cold water

Instructions
 

  • Combine all ingredients into mixer's bowl.
  • Using the dough hook attachment, on mediym-low speed, mix until the dough is very shiny! (about eight minutes)
  • Alternately, knead by hand for about 12-15 minutes.
  • Let rest 30 minutes.
