Vegetable Burger

Ingredients
  

  • 1 lb. green lentils
  • 2 lb. pearl barley
  • 2 green peppers
  • 2 red peppers
  • 1 red onion
  • 1 lb. button mushrooms
  • 4 T vegetable base
  • 1 qt. packed arugula

Instructions
 

  • Cook lentils with 1 T vegetable base to al dente. Strain & cool.
  • Cook barley with 1 T vegetable base similar to risotto keeping all the starch, strain IF necessary.
  • Puree peppers, onions, garlic, and mushrooms to a fine paste.
  • Sautee pureed vegetables to thick paste.
  • Puree 2 cups of the cooked barley (do not add liquid).
  • Mix all ingredients.
  • Season salt & pepper TT.
