Ingredients
  

  • 4 ears of corn cut off kernals
  • 1/2 c milk (non-dairy)
  • 2 T butter (non-dairy)
  • 3/4 c flour
  • 1/2 c ground cornmeal
  • 1/2 t baking soda
  • 1 t baking powder
  • salt and pepper (be liberal)

Instructions
 

  • using a blender, puree 1/3 of the kernels, butter, and milk
  • mix flour, cornmeal, baking soda, and baking powder
  • add puree mixture to the flour mixture and add the remaining kernels
  • add salt and pepper - add scallions if you please
  • stir until just combined
  • cook on griddle or pan over medium high heat - make sure cooked in the middle
