Crème Brûlée

Ingredients
  

  • 12 egg yolks
  • 1 qt. heavy cream
  • 1 c. granulated sugar
  • 1 t vanilla extract

Instructions
 

  • Scald cream with 1/2 of sugar and flavoring. Set aside.
  • Whip with whisk 1/2 sugar and yolks until light.
  • Slowly temper in cream.
  • Mix completely.
  • Blow torch off any bubbles in bowl.
  • Add to brûlée dishes.
  • Bake in water bath COVERED with sheet pan for 30 min or until set.
  • 350 degree oven.
