Classic Turkey Meatloaf

Turkey Meatloaf

Ingredients
  

  • 2 pounds ground turkey
  • 2 slices white bread torn into large pieces
  • 2 garlic cloves minced
  • 1 medium onion finely chopped
  • 1 celery stalk finely chopped
  • 1 carrot finely chopped
  • 1/2 cup fresh parsley finely chopped
  • 1 large egg
  • 3/4 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • salt and pepper to taste
  • 1 tablespoon light brown sugar

Instructions
 

  • Preheat oven to 375 degrees. Pulse bread in a food processor until finely ground. Add to a bowl with the meat, finely chopped vegetables and parsley, egg, 1/4 cup ketchup, the mustard, Worcestershire sauce, salt, and pepper; mix together using your hands. Transfer mixture to a loaf pan. Stir together remaining 1/2 cup ketchup and the brown sugar until smooth; brush onto meat. Bake for about one hour and 15 minutes, until a thermometer reads 160 degrees, Let cool slightly prior to serving.
