Cinnamon and Quince Poundcake

Ingredients
  

  • 4 eggs
  • 1/2 c sugar
  • 1/4 c quince paste
  • 2/3 c olive oil
  • 1/2 t cinnamon
  • 1 T orange zest
  • 1 T thyme leaves
  • 1 C all purpose flour
  • 1/2 c almond flour
  • 1 T baking powder
  • 1/2 t kosher salt

Instructions
 

  • 10 inch loaf pan, greased
  • 325° for 45 - 50 minutes
  • whip eggs for 30 seconds, add sugar
  • add quince puree and olive oil
  • fold in orange and cinnamon
  • fold dry while sifting
  • put in pan
