Basic Pasta Dough

Ingredients
  

  • 12 eggs
  • 8 yolks
  • 2 TBSP. extra virgin olive oil
  • palm and a half sea salt
  • 3 qt. durum flour
  • 1 pt. semolina flour
  • water, as needed

Instructions
 

  • Mix all dry ingredients together in large bowl.
  • Make a well in the center of your dry ingredients.
  • Add eggs, yolks, and EVOO into well.
  • Begin to mix by hand or with a dough hook attachment in mixer.
  • SLOWLY add water, until ingredients begin to come together.
  • Dough with be smooth, shiny, and firm when fully mixed.
  • DO NOT ADD TOO MUCH WATER.
  • Wrap tightly in plastic wrap and refrigerate for thirty minutes (rest).
