Turkey Meatloaf
Ingredients
- 2 pounds ground turkey
- 2 slices white bread torn into large pieces
- 2 garlic cloves minced
- 1 medium onion finely chopped
- 1 celery stalk finely chopped
- 1 carrot finely chopped
- 1/2 cup fresh parsley finely chopped
- 1 large egg
- 3/4 cup ketchup
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- salt and pepper to taste
- 1 tablespoon light brown sugar
Instructions
- Preheat oven to 375 degrees. Pulse bread in a food processor until finely ground. Add to a bowl with the meat, finely chopped vegetables and parsley, egg, 1/4 cup ketchup, the mustard, Worcestershire sauce, salt, and pepper; mix together using your hands. Transfer mixture to a loaf pan. Stir together remaining 1/2 cup ketchup and the brown sugar until smooth; brush onto meat. Bake for about one hour and 15 minutes, until a thermometer reads 160 degrees, Let cool slightly prior to serving.
