Cinnamon and Quince Poundcake
Ingredients
- 4 eggs
- 1/2 c sugar
- 1/4 c quince paste
- 2/3 c olive oil
- 1/2 t cinnamon
- 1 T orange zest
- 1 T thyme leaves
- 1 C all purpose flour
- 1/2 c almond flour
- 1 T baking powder
- 1/2 t kosher salt
Instructions
- 10 inch loaf pan, greased
- 325° for 45 - 50 minutes
- whip eggs for 30 seconds, add sugar
- add quince puree and olive oil
- fold in orange and cinnamon
- fold dry while sifting
- put in pan
