Pumpkin Bread
Ingredients
Bread
- 3 large eggs
- 1 ½ c. pumpkin puree
- ⅔ c. vegetable oil
- 1 c. sugar
- ¼ c. light brown sugar
- 2 t vanilla
- 1 ½ c. ap flour
- 1 T fresh pumpkin pie seasonsing
- 1 t baking soda
- ¾ t baking powder
- ½ t salt
Fresh Pumpkin Pie Seasoning (sans cinamon)
- 25 cardamom pods
- 10 whole cloves
- ¼ t fresh grated nutmeg
- ¼ t ground ginger
Pepita Topping
- ⅓ c pepitas (unslated)
- 1 t honey
- ¼ t vegetable oil
Instructions
Pumpkin Pie Seasoning
- Take the cardamom out of the pods.
- Put all ingredients in spice grinder.
Pepitas
- Combine pepitas, honey, and oil and stir to combine.
Bread
- Preheat oven to 350ºF.
- Spray a 9x5-inch loaf pan or cover the inside in parchment paper.
- Place eggs in a medium-large bowl and whisk well.
- Add pumpkin, whisk together until smooth then add oil, sugars, and vanilla and mix well again.
- Sprinkle flour, pumpkin pie spice, baking soda, baking powder, and salt evenly over the top of the pumpkin mixture. Mix just until all flour has disappeared.
- Transfer batter to prepared pan. Smooth the top and scatter the pepitas over the top.
- Bake for 55-75 minutes OR until a toothpick inserted into the center of the loaf comes out clean. If getting too brown, cover lightly with foil after 45 minutes.
