Crème Brûlée
Ingredients
- 12 egg yolks
- 1 qt. heavy cream
- 1 c. granulated sugar
- 1 t vanilla extract
Instructions
- Scald cream with 1/2 of sugar and flavoring. Set aside.
- Whip with whisk 1/2 sugar and yolks until light.
- Slowly temper in cream.
- Mix completely.
- Blow torch off any bubbles in bowl.
- Add to brûlée dishes.
- Bake in water bath COVERED with sheet pan for 30 min or until set.
- 350 degree oven.
