Basic Pasta Dough
Ingredients
- 12 eggs
- 8 yolks
- 2 TBSP. extra virgin olive oil
- palm and a half sea salt
- 3 qt. durum flour
- 1 pt. semolina flour
- water, as needed
Instructions
- Mix all dry ingredients together in large bowl.
- Make a well in the center of your dry ingredients.
- Add eggs, yolks, and EVOO into well.
- Begin to mix by hand or with a dough hook attachment in mixer.
- SLOWLY add water, until ingredients begin to come together.
- Dough with be smooth, shiny, and firm when fully mixed.
- DO NOT ADD TOO MUCH WATER.
- Wrap tightly in plastic wrap and refrigerate for thirty minutes (rest).
